Chef Mario Avallone presents his Pomopop like this: “During my wanderings in the Agro Nocerino, besides great products, today and in the past, I have some friends. A dear friend of mine that comes from Angri, Matteo, generous and farsighted, has introduced me to a man from another age, kind, an hard worker and who likes to get his hands “dirty”, in all senses. He lives in the center of a hill in Corbara and through him, first as a farmer, then a mechanic in the canning industries, I had the possibility to know and start to understand the tomatoes processing. That’s what I did with Lavorate ancient tomatoes and then with Corbara cherry tomatoes! Authentic. Exceptional!

POMOPOP – Antico pomodoro di Napoli 530g
Authentic San Marzano peeled tomatoes, with unique and inimitable flavor and taste, so delicious, in a 800 gr. can, just like they were packed in the early ‘900 in the Agro Nocerino Sarnese. Pomopop was born from an idea of the chef Mario Avallone, the same that told us the story of the product: the idea of creating these tomatoes in can was born from an encounter.

Grape yield per hectare : 60-70 quintals. Vinification : traditional fermentation with maceration for 8-10 days, racking, soft malolactic pressing in steel. Maturation : six months in new French oak barriques. Ageing : two months in bottle at controlled temperature. Tasting : Colour – lively ruby red with slight shades tending towards violet. Bouquet – intense, with scents of berries and spices. Taste – warm, full and pleasantly vinous, balanced, savoury and persistent. Alcohol content : 13% vol. Production area : Calabria, in the central-eastern part of the province of Crotone, in Carfizzi, locality “Motta”. Soil : clayey, calcareous. Altitude : from 200 to 300 metres above sea level. Training system : espalier with a density of 5600 vines per hectare. Climate : Mediterranean, with mild winters and hot, dry summers. Harvesting : manual, first week of August. Yield per hectare of grapes : 60 – 70 quintals. Vinification : destemming and crushing, soft pressing, yield in free run must 60% of the grapes. Maturation : in steel for two months. Refinement : one month in bottle at controlled temperature. Tasting: Colour – bright straw yellow. Bouquet – floral, it releases fresh fruit with notes of white peach, banana and mango with hints of hazelnut and almond in the finish. Lumare
Type : Rosé. Classification : Typical Geographical Indication Calabria. Grape variety : Gaglioppo and Cabernet Sauvignon. Production area : Calabria, in the central-eastern part of the province of Crotone, in Carfizzi, locality “Motta”. Soil : mixed type, with a certain percentage of active limestone. Altitude : from 200 to 300 metres above sea level. Training system : espalier with a density of 5600 vines per hectare. Climate : Mediterranean, with mild winters and hot, dry summers. Harvesting : manual, end of October. Yield per hectare of grapes : 80 – 90 quintals. Vinification : destemming and crushing, brief cold maceration with the skins, soft pressing, yield of free-run must 60% of the grapes, followed by fermentation at controlled temperature. Maturation : three months in new French oak barriques. Ageing : two months in bottle at controlled temperature. Tasting : Colour – salmon pink with cherry reflections. Bouquet – delicate, floral with hints of flowers and spices. Taste – soft, harmonious, lively. Alcohol content : 13% vol. Production area : Calabria, in the central-eastern part of the province of Crotone, in Carfizzi, locality “Motta”. Soil : clayey, calcareous. Altitude : from 200 to 300 metres above sea level. Training system : espalier with a density of 5600 vines per hectare. Climate : Mediterranean, with mild winters and hot, dry summers. Harvesting : manual, last week of September. Grape yield per hectare : 60-70 quintals. Vinification : destemming and crushing, soft pressing, yield in free run must 60% of the grapes. Maturation : in steel for the Greco bianco and two months in barriques for the Chardonnay. Refinement : one month in bottle at controlled temperature. Tasting : Colour – straw yellow with light greenish reflections. Bouquet – floral, complex and soft with light notes of dried apricot and exotic fruit. Taste – full and pleasantly fruity. Organic olive oil – Salsello
SALSELLO extra virgin olive oil takes its name from the district of the same name where the farm is located. This extends in the heart of Sicily, in the territory of Enna, at an altitude of about 500 m above sea level. Among the inland hills, far from any form of pollution, the long rows of olive trees spread out. The cultivars, grown according to the strict rules of organic cultivation, are Nocellara Etnea, Tonda Iblea, Biancolilla, Moresca and Cerasuola, all native varieties of Sicilian olive growing. This allows the olives to be pressed within a few hours of harvesting, and together with the use of the most modern extraction techniques, allows the organoleptic and chemical characteristics to be preserved, resulting in oils with very low acidity values (0.15 % as the limit for an extra virgin oil is 0.80 %) and a good balance between plifenols and peroxides . The oils produced can be either monovarietal or blended.

Olive oil Santacroce – Carolea
Carolea is the name of a cultivar that is widespread throughout southern Italy, but has been used in Calabria for centuries. It is thanks to the Carolea that Calabria is the second region in Italy for olive oil production after Puglia. Carolea oil is characterised by a low acidity that varies on average between 0.2% and 0.3% . It has a yellow colour with green reflections and a delicate fruity aroma with hints of apple, artichoke and herbaceous flavours. The taste is very delicate and harmonious.
